6oz caster sugar
6oz butter (I use stork)
6oz Self raising flour
Spoon of cocoa powder.
Grease 2 x 7 inch tins. Heat oven to 170deg. Mix butter and sugar in mixer. Add eggs and mix. Add flour and cocoa powder and mix (not too much). Divide into tins and cook for 30 mins. Check by sticking a metal prong in, and probably give it 5-10 mins more. Turn it out onto a wire rack to cool.
300g plain chocolate (from cooking aisle is what I use)
210 g unsalted butter
70g icing sugar
Melt chocolate and butter carefully in microwave (check after a couple of minutes and stir). Sift icing sugar and stir it in. Stir for about 2-3 minutes. Cool in fridge for 30 mins. (can warm a bit in microwave if you over chill). Spread inside and over cake. Decorate with something pretty!
