Here in a recipe from my friend Marie from the NCT gang. I could live off these I think!
We made them with dark choc because I didn’t have enough milk choc in. So good!
Here’s the recipe. Very easy – Rosie could probably make it. Or at least modge up some biscuits for you …
No-cook chocolate cake
250g digestive biscuits
300g milk chocolate (or dark if you prefer)
100g unsalted butter
150g golden syrup
250g of bits and pieces such as sultanas, dried apricots, dried cranberries, banana chips, nuts, meringue pieces, coconut shavings, glace cherries, mixed peel, orange zest … marshmallows if you want to make it Rocky Road-like.
Use cling film to line a standard-sized loaf tin. Leave extra cling film hanging over the sides.
Put the biscuits in a freezer-type bag and bash them to smithereens with a rolling pin.
Melt the chocolate, butter and golden syrup in a heatproof bowl set over a pan of simmering water. Stir occasionally.
Remove the bowl from the heat and stir in the broken biscuits and the bits and pieces.
Spoon the mixture into the tin and level the surface with the back of a spoon.
Leave to cool, then put the chocolate mixture in the fridge for 1-2 hours to set.
Turn out the cake and peel off the cling film. Slice up the cake and eat! 🙂
